Corn is naturally sweet, crunchy and easy to eat 🌽. No wonder it is everyone’s favorite veggie , especially kids. I tend to incorporate it into many of my dishes and this Corn Pomegranate Kosambari /Salad is one of them.The Kosambari is a traditional salad that is popular across Southern India.This salad marks its presence in festive meals and special occasions. It is a quintessential part of Ramanavami festival along with majjige (buttermilk) and paanaka (lemonade) .This nutritious salad is very versatile in terms of ingredients used and can be served as a snack or appetizer.

 

The Corn Pomegranate Kosambari / salad is a variation of the traditional kosambari. The basic salad calls for soaked moong dal (or chana dal),grated carrot and cucumber. But this colourful salad comprises of sweet corn kernels, pomegranate seeds, grated coconut and fresh coriander leaves along with a dash of lime 🍋 and some salt and pepper.This light, flavorful and delicious corn pomegranate kosambari is easy to assemble and takes less than 15 minutes to prepare. a nutritious and filling salad

Ingredients
  • 1 cup sweet corn (I used frozen corn)
  • 4 tablespoon grated coconut
  • 1 cup pomegranate seeds
  • 2 tablespoon coriander leaves (chopped)
  • 2 teaspoon Lemon Juice
  • 1/2 teaspoon pepper powder (adjust according to taste)
  • salt to taste
Instructions
To cook the corn
  1. Microwave method - Place the frozen corn into a microwave safe bowl. Add cold water. Microwave on high for 3 minutes.

     

  2. Stovetop method - Bring water to a boil. Add frozen corn and continue to cook for 3 to 4 minutes.

To make kosambari
  1. Drain the water from the corn and add it to a mixing bowl.

  2. Add the pomegranate seeds, coconut and coriander leaves to the bowl.

  3. Toss everything together with a spoon and season with salt, black pepper and juice of half a lemon.

  4. Serve immediately. Enjoy!

 

Corn Pomegranate Salad

Notes:

*Its best to add the salt, pepper and lime juice just before serving.

*Add chopped green chillies if you like a spicy kosambari. I have added pepper powder instead to make it  kid-friendly.

*Adjust the quantity of the ingredients as per your liking’s.
