Dilkush which means  “Happy Heart” ❤ in Hindi is a popular South Indian pastry with a sweet stuffing in it. It’s like a large round bun stuffed with a sweet coconut and candied fruit filling, usually cut into triangular slices available in most bakeries across southern India.They are sold as slices or as a whole pastry.Different regions make slight variations in the filling but the main ingredients coconut and tutti frutti remain pretty much the same.

My childhood memories of snacks simply bounce back to Iyengar Bakery and their sweet smelling Dilkush pastry filled with coconut,cherries,dates, cashews and tutti frutti redolent with the aroma of cardamom and sugar and everything sweet😋. Biting into the crunchy flaky slice of Dilkush would bring forth a burst of sweetness in the mouth and I would be transported to heaven and back!!

Dilkush is not available here  and whenever I felt like having one I used to end up satisfying myself with the coconut bun 😉(a round bread filled with sweetened coconut).I started googling for the Dilkush recipe and found quite a few recipes for the Dilkush bread. I did some variations and I loved the end result.Will try out the puff pastry version soon and then post it for you guys. But for now here is the bread version ..

Soft and delicious buns with a sweet filling

Ingredients
  • 2 1/2 cups All Purpose Flour / Maida
  • 1/4 cup sugar
  • 1/4 cup oil
  • 1/4 cup milk
  • 1 egg
  • 1 sachet (11 gm) active dry yeast
  • 4 tbsp warm water
  • 1 1/2 tsp salt
  • For the Filling:
  • 1 cup fresh shredded coconut
  • 1/2 tbsp cardamom powder
  • 1/4 cup powdered sugar (check and add more if needed)
  • 3 tbsp tutti frutti
  • 3 tbsp chopped cherries (glazed)
  • 3 tbsp of mixed dry fruits (dates, raisins and cashew)
  • 1/2 tbsp butter / ghee
Directions
  • Step 1 Mix 2 tbsp sugar in warm water. Sprinkle yeast.Stir well.Cover and keep aside for 10 mins or till frothy.
  • Step 2 Transfer it to a large mixing bowl. Add an egg and whisk well. Add milk and oil and the remaining sugar and whisk again till combined.
  • Step 3 Add flour and start kneading the dough . Knead the dough for 7 to 8 mins till the dough is smooth and elastic. Form it into a tight ball.
  • Step 4 Cover with a cling warp and set aside for 1 hr or till the dough doubles in volume.
  • Step 5 Mean while mix all the ingredients under the filling and keep it ready
  • Step 6 Transfer the dough out on the counter and divide it into 2 balls in the ration 2 : 3.
  • Step 7 Start rolling the small dough ball using the rolling pin and make it into a circle approximately 1/4 inch thick and 8 inch in diameter.
  • Step 8 Place it on the greased baking tray. Spoon the filling and spread it evenly making sure to leave 1 cm border all around.
  • Step 9 Now roll the bigger dough ball using the rolling pin and make it into a circle approximately 1/4 inch thick and 9 inch in diameter.
  • Step 10 Place the bigger circle over the stuffing and seal the edges by pinching them with your fingers and keep it aside for 15 mins.
  • Step 11 Preheat the oven for 180 degree C. After 15 mins beat an egg and brush it all over Bake the Dilkush bread at 180 degree C for 25 to 30 mins.
  • Step 12 Your Dilkush bread is ready Cut it into triangular slices and serve it warm.

Your Dilkush bread is ready Cut it into triangular slices and serve it warm.

Notes:

*Use fresh quality yeast. If your yeast doesn’t turn frothy, discard it and start over again.

*A stand mixer works best to knead the dough.
