Eggless Chocolate Gingerbread Men Cookies without Molasses

Hello Foodies,
Christmas time is here 🎄 And It’s that time of the year when your insta feed is buzzing with images of mouth watering festive cookies 🍪 – gingerbread, peppermint, linzer and meringue.Oh my! Watching a plethora of delicious cookies got me inspired to bake a batch of ’em myself. Being the ginger bread cookie lover that I am what else could I think of than the gingerbread men cookies. Since I made the classic version last Christmas, I wanted to try out something different this year. That’s when these Chocolate Ginger bread men cookies caught my eye.

As you know the classic gingerbread man cookies recipe requires molasses. But since I had the recipe of the eggless ginger bread men cookies that doesn’t require molasses I only had to tweak it a bit to turn it into chocolate ginger bread men cookies. I replaced some amount of the all purpose flour with cocoa powder and replaced the honey with date syrup for a darker colour and a caramelized flavor. I also used white chocolate to decorate my cookies this time instead of the icing that I used in my previous recipe.And Voila! I had these adorable chocolatey gingerbread men smiling at me in no time 😉

These gingerbread cookies will make any table feel festive. Flavored with spices and chocolate they are not only delicious, but are great for gifting to family and friends. I enjoy making them especially since it’s an easy recipe to involve your children. Eggless Chocolate Gingerbread Men Cookies without Molasses

adorable and delicious ginger bread men cookies with added goodness of chocolate


  • 1 cup + 2 tablespoons all purpose flour / maida
  • 1/4 cup cocoa powder
  • 1/4 cup brown Sugar
  • 1/4 cup date syrup ( or honey )
  • 1/4 cup or 1/2 stick unsalted butter (at room temperature)
  • 1/2 teaspoon baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt (skip salt if using salted butter)
  • 1 tsp ginger powder
  • 1 tsp cinnamon powder
  • 1/4 tsp cloves powder
  • 1/4 tsp nutmeg powder
  • 1/4 cup white chocolate for decoration
  • Step 1 In a large bowl, whisk room temperature butter , date syrup (or honey if using) and brown sugar until well combined.
  • Step 2 Place a sieve over the bowl and add in the flour, cocoa powder and the powdered spices (ginger, cinnamon , cloves and nutmeg) along with the baking powder, baking soda and salt.
  • Step 3 Sift the dry ingredients into the wet ingredients and mix gently until combined.
  • Step 4 Shape the dough into a rectangle and wrap it in cling wrap.Refrigerate for at least 2 hours or overnight (or up to a week).
  • Step 5 Preheat the oven to 180 degrees C.Line 2 baking sheets with parchment paper.
  • Step 6 Roll the dough out to 1/4 inch thickness, on a lightly floured surface with a lightly floured rolling pin. Alternatively roll out the dough between two sheets of parchment paper or cling wrap to prevent sticking.
  • Step 7 Cut out the gingerbread cookies using the cookie cutters.
  • Step 8 Place the cookies on a baking sheet and bake for 10 – 12 minutes.
  • Step 9 Remove the gingerbread cookies from the oven. Cool completely.
  • Step 10 Cut the white chocolate bar into chunks with a knife. Doing this will make it easier to melt ( or use white chocolate chips instead)
  • Step 11 Place it in a microwave safe bowl and put it in the microwave. Heat it on medium high for about 1 minute. Remove from the microwave and stir. Repeat heating at 10 second intervals, stirring in between, until the chocolate is completely melted and has a smooth consistency. Use a toothpick and decorate your cookies.

Notes –
*If you find your dough to be too sticky, place the dough into the freezer for 5-10 minutes and it’ll be a lot easier to work with.
*The color of your gingerbread cookies may vary with the brand of cocoa powder that you are using.
*using honey instead of date syrup could also result in lighter colored cookies
*While decorating the cookies If chocolate hardens at any point of time, you can reheat it in the microwave for 10 seconds and reuse it.
