Hello Dear Readers,

Now that 2018 has begun, we’re sure that most of you must have indulged in your favorite guilty pleasures during the New Year’s eve party. After all that binge eating during the festive time, it’s now time to indulge in some healthy food.

Pundi or Pundi Gatti, as we call it in Tulu ,is a round shaped , soft , steamed rice dumpling which is a staple breakfast in our Mangalorean cuisine. It is generally prepared by soaking rice , grinding it , adding fresh shredded coconut , shaping them into round balls and finally steaming them.There are many variations to these steamed rice dumplings, both sweet and savory. 

This Idli Rava Pundi is an instant version and is super easy to make than compared to the traditional one. It doesn’t require soaking and blending the rice.The  idli rava tends to give these pundis the perfect granular texture.Vegetarians can serve pundis with coconut chutney or vegetarian curry. But my family loves to relish them drenched in Mangalorean style Chicken Curry.

quick and easy recipe to make soft steamed rice dumplings or pundi

Ingredients
  • 1 1/2 cup idli rava / rice rava
  • 2 cups water
  • 1 teaspoon oil
  • 3/4 cup shredded coconut
  • salt to taste
Directions
  • Step 1 Bring water to a boil on medium heat.Add oil and salt.
  • Step 2 Lower the flame to a sim. Add the idli rava and give a quick mix.
  • Step 3 Cover and cook for a minute on sim (or till the water is absorbed completely)
  • Step 4 Open the lid and add coconut. Mix well with a wooden spoon.
  • Step 5 Add sufficient water to the steamer vessel and start heating it.
  • Step 6 When the idli rava mixture is warm enough to handle start making balls out of the mixture and place them on the plate of the steamer.
  • Step 7 Once the water in the steamer comes to a boil, place the steamer plate with rice rava balls and cover with the lid.
  • Step 8 Steam for 15 to 20 minutes. Idli rava pundis are ready to be served!
