Orange Blueberry pancakes are thick and fluffy pancakes ğŸ¥ž that make for an easy breakfast.The plump blueberries give these beauties a refreshing fruity flavor and a beautiful color. And the freshly grated orange zest boosts the flavor and smells incredibly good.

I have to admit that pancakes make a rare appearance on my breakfast table. Not because I don’t love them but because I enjoy making typical south Indian breakfast every morning. And on those days when my children ask for pancakes I end up making them for snack time.


I have tried a dozen recipes for pancakes before but these orange 🍊 blueberry pancakes are the best I’ve ever made. Light and airy, golden brown, bursting with blueberries these pancakes taste fantastic! Hope you enjoy making these delicious pancakes for your next breakfast or snack-time 😉

Orange Blueberry Pancakes

Ingredients
  • 1 1/2 cups all purpose flour / maida
  • 3 tablespoons powdered sugar
  • 1 teaspoon salt
  • 3 1/2 teaspoons baking powder
  • 1 large egg
  • 1 1/4 cup milk
  • 3 tablespoons melted unsalted butter
  • 1 tablespoon orange zest or zest of 1 orange
  • 1 cup blueberries
Directions
  • Step 1 Sift together flour, powdered sugar, salt and baking powder into a large bowl.
  • Step 2 Make a well in the center and add the egg, milk, melted butter and orange zest. Whisk until everything is just combined.
  • Step 3 Fold in 3/4th of the blue berries.
  • Step 4 Heat a non stick tawa or frying pan on medium heat.
  • Step 5 Drizzle a few drops of oil (or butter).
  • Step 6 Drop 1/4 cup of the pancake batter to the pan scooping from the bottom of your bowl to pick up a few blueberries.
  • Step 7 Cook for 2 to 3 minutes, until bubbles form on the surface.
  • Step 8 Flip them and cook the other side for 2 minutes or till golden brown. set aside.
  • Step 9 Repeat steps to until all the batter is used up.
  • Step 10 Stack 2 or 3 pancakes. top with some cubed butter and fresh blueberries. Drizzle with honey and maple syrup. Serve!

Notes :
*Pancakes are best eaten hot. So try serving them as you cook.
