The aroma these leaves spread around is pretty awesome. You can make a variety of dishes using this lovely herb like Doddapatre thambuli, bajji and even rasam. Today let us see how to make a lip smacking chutney using these leaves.This chutney is easy to put together with just a few ingredients and tastes heavenly. Serve it with steamed rice, dosas, rottis or chapatis and Enjoy!

a healthy , delicious chutney made using sambarballi leaves

Ingredients
  • 5-6 big sized sambarballi leaves (around 10 small sized leaves)
  • 1 tablespoon ghee
  • 1/2 cup fresh grated coconut
  • 2 green chilies
  • a small piece tamarind
  • 1 small piece ginger (1/4 inch)
  • salt to taste
  • To temper
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • few curry leaves
Directions
  • Step 1 Heat ghee in a pan on low to medium flame. Add the sambarballi leaves and saute for a few seconds till the leaves wilt. Remove the leaves to a plate.
  • Step 2 Fry the green chillies in the remaining ghee for a few seconds and switch off the flame.
  • Step 3 Blend the wilted leaves and green chillies with coconut, ginger, tamarind , salt and a few tablespoons of water to a smooth paste.
  • Step 4 Transfer to a bowl.
  • Step 5 To temper: Heat the oil in a pan. Add mustard seeds. Once they start popping add curry leaves. Once the curry leaves turn crisp, switch off the flame.
  • Step 6 Add the tempering to the chutney and mix well. Healthy and Tasty Sambarballi chutney is ready to be served.
