Moist , Fruity and Fluffy strawberry cupcakes with cream cheese frosting

Servings: 12 cupcakes

Ingredients
For the cupcakes
  • 1 cup chopped strawberries or 1/2 cup strawberry puree
  • 1 1/4 cups all purpose flour (maida)
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup + 3 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk* refer notes
  • 1/2 cup oil (I used sunflower oil)
  • 1 egg
  • 1/2 teaspoon vanilla essence
  • few drops red food colouring optional
For the Frosting
  • 200 gm cream cheese room temparature
  • 100 gm butter unsalted
  • 3/4 cup powdered sugar (icing sugar)
Instructions
For the cupcakes
  1. Preheat oven to 180 deg C. Line a 12 cup muffin tin with cupcake liners.

  2. Blend the chopped strawberries into a smooth puree. You should have 1/2 cup puree.

  3. Add the strawberry puree, buttermilk, oil, egg, vanilla extract and food color (if using) to a mixing bowl. Whisk until everything is just combined.

  4. Gradually add sugar and continue beating until well combined.

  5. Sift flour, salt, baking soda and baking powder into the bowl. Use a spatula and fold gently until the flour is well incorporated.

  6. Scoop the batter equally into 12 cups of the muffin tin. Bake in the preheated oven for 20 - 25 minutes or until a toothpick inserted comes out clean.

  7. Remove the cupcakes and transfer them to a wire rack. Let them cool completely before frosting them.
For the frosting
  1.  Leave the cream cheese and butter on your kitchen counter till they reach room temperature.

  2. Beat butter and cream cheese together using an electric mixer on medium speed until fluffy.

  3. Add the powdered sugar and mix to combine.
  4. Transfer frosting to a piping bag fitted with the star tip, and frost the cupcakes.
  5. Garnish cupcakes with sliced strawberries.

Notes

*Add 1/2 tablespoon vinegar to 1/2 cup milk and leave aside for 10 mins. Use this as a substitute for buttermilk

*Use equal amount of hung curd if you do not have cream cheese handy.

*The cream cheese and butter should be at room temperature while making the frosting.
