Say Hello to Strawberry Phirni – a creamy and fruity twist to the classic Phirni. Phirni is a delectable rice pudding prepared on most festive occasions across India and middle east. This dessert has a thick creamy texture and tastes absolutely delicious when served chilled.


There are many different varieties of this milk pudding with popular flavors including saffron, rose and mango. Today I have used strawberries to flavor the phirni. And Oh boy! This creamy, milky and rich rice pudding with a strawberry infusion is not only a sight to behold but also a treat to your taste buds. a creamy, delectable rice pudding with a fruity twist

Ingredients
  • 1/4 cup Basmati Rice
  • 1 liter whole milk (full fat milk)
  • 3/4 cup Sugar
  • 1 tsp Rose essence ( or cardamom powder)
  • 1 cup chopped strawberries
  • Few Pistachios slivers and strawberries for garnish
Directions
  • Step 1 Wash and soak the basmati rice in enough water for an hour. Drain the water and grind the rice to a coarse paste with 3 tablespoons of milk (or water).
  • Step 2 Heat the milk in a heavy bottomed pan and bring it to a boil.
  • Step 3 Lower the flame to sim and gradually stir in the rice paste, stirring continuously.
  • Step 4 Cook the rice and milk mixture on a low flame, till the rice gets cooked completely. Make sure to keep stirring the mixture as the ground rice tends to clump easily.
  • Step 5 Once rice is cooked add sugar and mix it well.Turn off the stove, once the mixture thickens. 
  • Step 6 Add 1 tsp of rose essence,mix it in and allow the mixture to cool completely.
  • Step 7 Blend the chopped strawberries to a smooth puree.Add the puree to the cooled phirni and mix it well.
  • Step 8 Pour the phirni into individual matkas or serving glasses, garnish with sliced pistachios and strawberry slices.
  • Step 9 Refrigerate and serve them cold!

Refrigerate and serve them cold!

Strawberry Phirni

Notes

*Add the strawberry puree only after the phirni has cooled down completely.

*The color of your phirni may vary depending on the color of the strawberries.Add a few drops of pink food coloring to get the desired color.

*If the phirni becomes too thick add some milk to get the desired consistency.

* You can also add a tablespoon each of chopped almonds and pistas to the phirni .
