It is simple to make and is a real crowd pleaser.

Virgin Passionfruit Mojito

The Passion Fruit is one of the most aromatic and flavorful fruits imaginable.I love passion fruit with all my heart and soul.This fruit brings me back memories of my annual visit to Grandparents house during summers. Mangoes hung from trees, there were gooseberries, tamarind, and guavas and of course there were passion fruit vines.The vigorous passion fruit climbers covered much of the tiled roofs while returning a bumper crop of delicious home-grown fruit.
Me and my cousins used to look for the ones which are bright yellow in color with slight indentations on the skin – which meant they were ready to eat. We used to slice them open and eat the pulp with a spoon.Refreshing and slightly tart at first, the fruit became sweeter, exhibiting more of the complex flavors as we gulped them with the seeds. Ah! the joy of eating them fresh off the vine!If you’ve never experienced this sweet, fleshy fruit, now is the time to try it.

Virgin Passionfruit Mojito Recipe

refreshing and zingy virgin passion fruit mojito (alcohol free)

Ingredients
  • 8 mint leaves
  • 1/2 lime, quartered
  • 1/2 passion fruit
  • 1 & 1/2 tablespoon sugar
  • Ice cubes
  • lemon flavored soda like 7UP or Sprite
Directions
  • Step 1 Place the mint leaves, lime wedges and sugar in a tall glass
  • Step 2 Then using a muddler or a wooden spoon, squish them all together, so that the juice comes out of the lime and the mint leaves release their flavours.
  • Step 3 Scoop the pulp from a halved passion fruit and add it to the glass.(Alternatively pass the seeds through a sieve to extract the juice and add the juice to the glass) .Give a quick stir.
  • Step 4 Add ice to fill the glass and then pour the lemon flavored soda.
  • Step 5 Gently stir the mixture together with a straw.Garnish with mint sprigs.Serve Immediately

Notes :

*For a prettier presentation, remove the muddled lemon peels and add slices of lemon/lime in the end. Also add the passion fruit seeds on top if you use only the juice in the step 3.

**Adjust the quantity of sugar as per your taste.
