Watermelon is everyone’s favorite summer fruit. We end up devouring the sweet and juicy red flesh of the Watermelon until we reach the rind and then toss it away. But did you know that you actually can eat the watermelon rind too ? From pickles to curries there’s actually a lot that you can do with the mildly sweet rind. Just like watermelon seeds, the rind has a surprising amount of health benefits giving you all the more reason to use the rind instead of tossing it.

And what better way to use these rinds than in a delectable halwa. The Watermelon rind halwa tastes much like the Ash gourd halwa ( white pumpkin halwa ) popularly known as “Dumroot” which is a wedding menu staple across Karnataka.

The next time you finish devouring the sweet, juicy insides of a watermelon, think about turning the rinds into this delicious halwa.

a delicious indian dessert using watermelon rind

Ingredients
  • 2 cups grated watermelon rind
  • 1 cup sugar ( 3/4 cup if you like it mildly sweet)
  • 1/4 teaspoon cardamom powder
  • 3 tablespoon ghee
  • 1 tablespoon cashews halved
  • 1 tablespoon raisins
Directions
  • Step 1 Remove watermelon flesh from rind. Scrape off and discard any remaining pink flesh from rind,remove green peel with a vegetable peeler or a sharp knife.(cut the rind crosswise into 2-inch-wide strips for ease in peeling) and discard the green peels. Grate the rind using a grater.
  • Step 2 Add the grated rinds along with the juices released during the grating process to a thick bottomed pan and let it cook.
  • Step 3 Once most of the water evaporates and the rinds are cooked well, add sugar and 2 tablespoons ghee.
  • Step 4 Cook on a low to medium flame stirring continuously until the halwa and the ghee separate.
  • Step 5 Add cardamom powder to the halwa. Mix well and turn off the heat.
  • Step 6 Mean while heat the remaining ghee in a small pan and add cashews.Once they turn golden in color, add raisins. Fry it until it puffs up. Turn off the heat and add this to the halwa.
  • Step 7 Allow the halwa to cool and Enjoy!

Notes :

*If the rinds remain uncooked and all the water evaporates then add some water and cook till the rinds are completely cooked.

*Adjust the quantity of sugar according to your taste.

*Do not add the sugar before the rinds are cooked completely.
